Eat Like A Viet: Beef salad
Beef Salad
Preparation Time 30 min Serves 4 – 6
Ingredients
500g beef skirt thinly sliced
2 large red onion, thinly sliced
bunch of rice paddy herb, chopped into 1cm lengths
3 – 5 Sawtooth coriander leaves, sliced as thin as possible
4 – 6 birds eye chillies, thinly sliced <- I personally love this dish extra hot but feel free to opt for mild chilli
½ cup roughly crushed peanuts
Dressing
½ cup chilli paste in soya bean oil
3 TBS sugar
½ cup lemon juice
1 TBS fish sauce
Spread out the beef in the bottom of a colander. Place over the sink and pour boiling hot water over the meat evenly, once cooled slightly squeeze out excess blood and leave in the colander in the fridge to drain further whilst you prep the remaining ingredients
In a large mixing bowl, combine all dressing ingredients together and add the drained beef, mixing until every piece is well coated, add all remaining ingredients into the bowl, mix and serve immediately!
